Guacamole Dip


Korea not so good when it come to dip, well not in Suncheon. But we can get Avocados (which always go on sale in Homeplus before they are ripe) So here is what I do for my Guacamole.
  • Avocado
  • Onion
  • Tomato
  • Lime Juice
  • Salt
  • Splash Hot sauce
Mash the avocado you can chop it if you want you guacamole chunky. Chop your small onion finely. De seed your tomato and chop mix all together add you lime salt and hot sauce . You can also add garlic or jalapenos.

Hot Brie Dip made in toaster oven


  • 2 tablespoons of butter
  • 1 small chopped onion
  • 2 teaspoon chopped garlic
  • 1 cup of Brie
  • 1 cup of cream cheese
  • 2 teaspoon of brown sugar
  • 2 teaspoon lemon juice
  • splash of Worcestershire sauce
  • some chopped rosemary
  • 2 tablespoons of Mayo
  • salt and pepper


Mix together put in oven proof bowl and cook at 160-180 with tin foil cover for 40 mins

I was really happy with this . I suggest you also use Dill, Thyme or Paprika instead of rosemary.
And 3/4 cup of sour cream instead of mayo (we cant get sour cream here very easy)

Irish Apple Tart


Pastry
2 cups plain flour
1 cup butter
3/4 cup white sugar
2 eggs
A pinch of salt

  • For the pastry, mix the flour,salt and butter together until you have the texture of breadcrumbs. Add the sugar and eggs and mix until everything comes together. Wrap the pastry with cling film and chill.
For Filling
Cinnamon,
Cloves ,
Apples,
Brown Sugar
Whipped Cream
You could also Tip raisins into a pan with the whisky, and add 1 tsp of the sugar. Bring to a simmer, then leave to one side. Like in this recipe
Chop the apples and toss in some cinnamon ,cloves and sugar .
Brush the top of the tart with egg mixture.
Place in preheated oven 180C for 30-40 mins
Serve hot with Ice cream or whipped cream.

Carrot Cake


Carrot Cake
4Eggs
1 1/2 cup veg oil
2 cups white sugar
2 teaspoons vanilla extract
2 cups flour
2 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoon ground cinnamon
3 cups of grated carrot
1 cup of pecans optional
cook 175C(350F)
For 40-50 mins
I tried this the first time didn't work.
The second time time I split the mixture in two and it came out perfect
Frosting
1/2 cup of butter
1 cup of cream cheese
2 cups of powder sugar

Pork Belly (Sam gib sal like never before )



Brine Is here


Slice the fat and pierce it with cloves. Cook the fat on a hot pan for 5-10 mins. Put in the oven for 1hr 30 to 2 hr at 180. I placed it on a bed of jujube, pomegranate and Quince.
I glazed it with maple syrupy and brown sugar. I would have liked to use Asian pear juice

Pomegranate Season




"After opening the pomegranate by scoring it with a knife and breaking it open, the arils (seed casings) are separated from the peel and internal white pulp membranes. Separating the red arils is simplified by performing this task in a bowl of water, wherein arils sink and pulp floats. Joe McPherson From Zen Kimchi wrote this recipe in the Korean herald so I decided to try it out for a dinner party . It was so good everyone wanted more. The recipe was originally inspired by steamykitchen.com. Check it out here

ZenKimchi Marinate
Before cooking marinate them. In a bowl, mix a spoonful of gochujang (red pepper paste), a quarter cup of mirim (rice cooking wine), the juice of a lemon and a half bottle of soju.

I totally had no time for a marinate I was not quite as prepared as I would have liked to be.
To make it easy I cut the the man du wrappers in to strips .Don't forget to slice the intestine pipe out of the back of the shrimp.
Serve with some sweet chili sauce.

Suncheon cooking night ... Lasagna.

Lasagna

For this you will need
Tomatoes fresh or canned , onion, peppers, mushrooms,Beef and pork (ground )
garlic, basil, black pepper balsamic vinegar,oregano, Parsley, rosemary, bacon and bacon fat.
Lasagna noodles ,
Cheese sauce
milk, cheese , nutmeg, flour and butter
I know American Like Ricotta in their Lasagna you can make this in Korea. Its not to difficult check out here . I am pretty sure my mother only put cheese on the top and the White sauce was just that a flour butter milk sauce. So make your tomato sauce add you meat. Make you "WHITE SAUCE "add your cheese . Layer it tomato meat, noodle, white cheese sauce, meat, noodle, till you have you dish full, finish with white cheese sauce on the top. Cook at 210 for 20mins or till the noodles are soft.
I like lasagna best the next day.
To go with this I made some Garlic bread.
I just got a baguette from the bakers . Cut slices into it and filled with garlic parsley butter. Wrap in foil and place in the oven . This garlic bread is crispy on the outside and soft on the inside (with no sugar Koreans like sugar on their garlic bread)
Another very enjoyable Suncheon cooking night.

Melamine Scandal Kills Pepero Day

Korean Beat Brings Us This

The Chosun Ilbo reports that Pepero Day sales at GS25 stores were down over 55% compared to last year, the worst Pepero Day in the company’s history. Sales at Family Mart were down a whopping 73.2%.
To be Honest the 20 or so packets of pepero I received and the unbelievable amount that was at my school. It really didn't look like my children were too worried.

Another Sunday Loin


Pork loin with Maple Guinness glaze.
Glaze
Guinness, Brown sugar and Maple syrup,
Mix together and reduce by half

Brine
I made with Water, Brown sugar, Apple Vinegar, Salt, Pepper corns and Mustard powder.
I mixed the vinegar, sugar, kosher salt and mustard powder together and heat till everything was dissolved. Mix with cold water and pepper corns add pork loin and place in the refrigerator for 24 hours . Cook at 180 for 1hr 20 min glaze and re glaze every 20 mins.
Rosemary and Garlic potatoes
For potatoes I steamed for 20-30 mins then cut into wedges added chopped rosemary and garlic powder. Some oil. Placed on a hot baking try with a little oil (hot). In a preheated oven 200c.
