In Season. What you cooking?

So I have come up with a3 course menu using these ingredients . I would like to hear about other peoples ideas before I post it . I think it is only right that we eat whats in season . When it is most nutritious and cheapest . My Menu is aimed at an alternative Thanksgiving .
I haven't yet made a persimmon pie but there is one on the way shortly.
And there are plenty of pumpkin pies on the way also.

I am also looking for any recipe ideas on Jujbes other than Sam Gae Tang. I have found a few but nothing special yet. What you thinking ?

I've substituted them for dates in the past, like in a chicken tangine. The tangine sucked, but the jujubes were good. They're also good in braised foods, like the pork trotters I made on the Food Journal.
