How to make Yogurt cheese

Simply place a coffee filter (cheese cloth)(you can buy these in every store)in a large strainer. Pour Plain yogurt into the filter. Draining overnight will give you a soft cream cheese-like consistency. This will keep for a week. This can be used as an alternative for sour cream or mayonnaise.
You can make tazitki with this. I make it all the time.

Sweet Balsamic Yogurt Cheese Dip

2 cups vanilla yogurt (low fat or fat free can be used)
½ cup balsamic vinegar
1 teaspoon lemon juice
2 teaspoons brown sugar
2 teaspoons cinnamon or grated cinnamon stick

Drain the yogurt for at least 6-8 hours. In a small saucepan, combine the vinegar, lemon juice and brown sugar over low – medium heat until you have about ¼ cup. Let cool. Combine balsamic mixture, yogurt and cinnamon to taste. Spoon over strawberries or other fruit as desired.

Spinach Dip

2 cups Plain Yogurt drained for 20 mins
1 10 oz. box frozen chopped spinach
1/2 cup low-fat ricotta cheese
1/2 cup grated Parmesan cheese
1/2 cup minced scallions
2 tablespoons chopped fresh dill*
salt and ground black pepper, to taste

I take a Protein shaker and half fill with cream make sure the bar piece is in place. Put the lid on and shake. After 5 mins it should be much thicker. When I cook my favourite cream to use is Seoul Milk . Here in Suncheon they sell it at Emart. I like to make Pasta dishes with it .There is no sugar added. Often the other creams add sugar . They use the name whipping cream. I avoid these.

Guacamole Dip


Korea not so good when it come to dip, well not in Suncheon. But we can get Avocados (which always go on sale in Homeplus before they are ripe) So here is what I do for my Guacamole.
  • Avocado
  • Onion
  • Tomato
  • Lime Juice
  • Salt
  • Splash Hot sauce
Mash the avocado you can chop it if you want you guacamole chunky. Chop your small onion finely. De seed your tomato and chop mix all together add you lime salt and hot sauce . You can also add garlic or jalapenos.

Hot Brie Dip made in toaster oven


  • 2 tablespoons of butter
  • 1 small chopped onion
  • 2 teaspoon chopped garlic
  • 1 cup of Brie
  • 1 cup of cream cheese
  • 2 teaspoon of brown sugar
  • 2 teaspoon lemon juice
  • splash of Worcestershire sauce
  • some chopped rosemary
  • 2 tablespoons of Mayo
  • salt and pepper


Mix together put in oven proof bowl and cook at 160-180 with tin foil cover for 40 mins

I was really happy with this . I suggest you also use Dill, Thyme or Paprika instead of rosemary.
And 3/4 cup of sour cream instead of mayo (we cant get sour cream here very easy)

Hummus and Tazitki

Tazitki

Greek yogurt
Cucumber
Dill/Mint
Garlic
Lemon Juice

So In Suncheon its not so easy to get Greek yogurt.
So to make some bring some milk to a simmer.
Sterilize a Thermos and add some plain yogurt add milk allow to cool to 30 degrees or to warm . Put in lid on Thermos and leave for 8 hrs.



Hummus

chick peas
lemon juice
garlic
cumin
oil
