The day after Christmas

Turkey Sandwich
Take a fresh baguette . Take yesterdays turkey and some stuffing (we have no gravy or cranberry sauce left) some whole grain mustard , some steak sauce and a little mayo. A little chopped jalapeno. Dig out some of the soft bread in the middle of the baguette and place everything in the hole . Season with salt and pepper wrap in foil and place in the oven for 3 minutes .

Stuffing the Bird

I like my stuffing or dressing really plain no nuts or raisins . I really like tradition and am happy to stick to it .
I used dry bread, Parsley, Celery leaves, Sauteed onion, butter, grated carrot and fried bacon . I seasoned with salt, pepper added Sage, Thyme and Fresh rosemary . I added some Chicken stock and Placed the stuffing under the skin of the bird .I then covered in butter and cook the 15lb turkey wrapped in foil at 180 for 3 hours. Then removed the foil and cooked for another hour.

Strawberries in a glass



I took a few biscuits and soaked in whiskey added a little butter. Placed in a freezer. Then I made a white chocolate mousse and let set . I added strawberries and crushed biscuit and some brown sugar and topped with whipped cream.

Turkey stuffed with 10 other birds

I cant get turkey out of my head as I am cooking 3 this year for 50 people . Yes I do live in Suncheon and maybe a little crazy to take on such a task. It really makes life more interesting.

Shepherds Pie/Cottage pie

I am a little home sick these day so I make some home everyday food to try and make it easier. In Korea I have to use ground beef at home I would use lamb.
I sauteed carrots, mushrooms, onions, celery in butter. I add the beef and brown it . Then I add a beef stock cube (you can use Sogogi Dashida (소고기 다시다)) Some thyme, Fresh rosemary and a little sage . After about 10 minutes on medium heat I add a little corn starch to thicken it (at home I would use some bisto I cant help it. Its an Irish thing. More about Bisto here). For the potatoes I boil them first them mash them to make great mash I use cream ,butter and just a little salt. On a usual night I use milk instead of cream.
Then You should put the potatoes on the meat and put in a preheated oven at 210c. Dab the potatoes with a fork to make nice and crunchy .
cook for 20 mins

(other things you may use Worcestershire sauce, red wine if your really not traditional garlic)

Ginger and Five Spice Pork


This was a mid week trow together. I used up the pineapple in my fridge. A small carrot and some mushrooms . I brought some cheap pork and marinated it in some soy sauce some five spice and ginger. Put everything in to a roasting dish and put it in the oven at 180 for an hour. then put it up to 240 for 30 min . I finished it by thickening the sweet sauce with some corn starch and I like a kick so I added some pickled jalapenos.

Five spice Powder
Called Five spice because the five elements involved
Wood, fire, water, earth, metal and water.
Here is how to make it
3pieces of star Anise
20 cloves
3inches of cinnamon
1 tbs of szechwan peppers
1 tsp fennel seeds
1/2 tsp of salt
1/4 tea of white pepper.

Leek and potato Soup



I love this soup. I made it with white part of the Leek, onion, Potatoes, chicken stock, Milk mushrooms and one small carrot . A little Thyme, salt and pepper. I sauteed the onion leek and mushrooms in a little butter . I add the chicken stock and bring to the boil . Then add the carrots and sliced potatoes. When everything is cooked I blend and add milk. I sauteed the green part of the leek in a little butter and added at the end. Its great winter food .
Other great ingredients in this would be bacon , bacon fat, rosemary or minced garlic.
