Slice the fat and pierce it with cloves. Cook the fat on a hot pan for 5-10
mins. Put in the oven for 1hr 30 to 2 hr at 180. I placed it on a bed of
jujube, pomegranate and
Quince.
I glazed it with maple
syrupy and brown sugar. I would have liked to use
Asian pear juice

However, I was a little concerned about the cooking temperature. I believe meat should be cooked above 200F at minimum for health reasons?
